Frozen Beef Stew
Last week I talked about Malia Russell’s freezer meal plans. SO, as a special treat, this week I am posting my own recipe for Frozen Beef Stew. You will note that the recipe calls for pureed onions. My family likes the flavor onion provides, but NOT the onion texture. Half of my family will not eat anything that has visible onions (among other foods). Years ago I decided to see what would happen if they could not see certain foods. I started with onions and was really surprised that no one even knew they were even incorporated in the meal! If you have finicky family members, consider pureeing anything they may not like in a visible form.
Frozen Beef Stew
- 1 lb beef cubed
- 1 TBSP olive oil
- 2 tsps minced garlic
- ½ c pureed onion
- 5 medium potatoes quartered
- 5-8 carrots, chopped
- 3 stalks celery, chopped
- Salt & pepper to taste
- Heat oil in skillet. Add minced garlic and pureed onions and cook for about 45 seconds to a minute. Add cubed beef and cook just until it is no longer pink.
- Remove from heat and allow to cool completely.
On cooking day, pour contents of bag into slow cooker. Add 2 cups water (you can add up to 4 cups). Set crock to low and cook 4-5 hours.
If you like your stew to have a thick base, remove a ladle of hot liquid from crock and place in small bowl. Add 1-2 TBSPS of cornstarch (depending on how much liquid you have in the crock), and mix until completely dissolved. Pour back into crock and turn to high. Give a good stir and let cook for 15-20 minutes, or until thickened.

Using a gallon size freezer bag, place potatoes, carrots, celery, and cubed beef (including pan juices in bag. Seal well. Freezer flat.
