Even Picky Eaters will Eat This
I have one of the pickiest eaters on the face of the planet. I can back this up that when one of my daughters goes anywhere that food is offered, I always get comments about her fickleness. I can further back this up with the fact that any time she goes to play at a new friend’s house for the first time, the mom always comments to me that she doesn’t eat anything or asks what I feed her. This always gives me a chuckle, because I know this about her, yet I never remember to express this to a mom prior to the playdate.
I have had tried a multitude of recipes in a variety of ways to get her to eat a wider selection of food. I admit most of the recipes go over well with the rest of the family, but when it comes to this one daughter, I don’t even get excited when I offer something new, because she normally shoots it down. All this said, when I say a picky will eat something, I can almost guarantee that to be true of any picky eater. This soup recipe came from a desire to use up leftovers, incorporate more vegetables in our diet, which some family members detest, and to get my picky eater eating along with us.
This is a soup that does all of this things. You may have read about freezing leftovers in a large container in your freezer. This method requires that you continue to add leftovers until you have filled the container and then use it to make soup. My family has not been a fan of this. Not only that, but I have found that I have often left that container too long in the freezer and it gets freezer burned, thus giving off that funny taste. So, I discontinued that practice and modified the idea. I do this every seven to ten days and it is always well received. Now, that the weather is turning cool, many of you will be returning to a different style of cooking. This is the perfect time to try this recipe out!
Picky Eater Soup
3 c veggie or chicken broth Any leftovers (veggies, potatoes, legumes, meat, rice, etc).- Dehydrated pasta, such as tortellini or mini raviolis.
- Place broth in a large dutch oven.
- Put all leftovers in a food processor and puree. Since I have a very finicky girl, I puree until the food is as liquefied as I can get it. Add to the broth. Bring to a simmer, then reduce heat to low and allow all the flavors to cook together. I usually try to let this cook about 45 minutes to an hour, but on a quick night it may only be 15 minutes.
- Add dehydrated pasta and bring to a boil for about 15 minutes. Turn off heat and allow to sit for about 5 minutes.
I have used everything in this recipe! I mean everything that even my most finicky eater will not eat such as beans, onions, leftover meats (especially those that might be dried out by re-heating them by any other method), dark green leafy veggies, leftover salad (YES you can use all salad ingredients in soup!), broccoli, or anything you have had over the last week and hasn’t been eaten up! This is a great way to keep yourself from throwing away your leftovers. What appeals to me most is that I am regularly cleaning out my fridge, saving money, stretching my food budget, and it makes the most yummy soups!
