With our life schedule getting so crazy the last few months breakfast was a meal that was often being skipped. But then the hubby surprised me with a much wanted little appliance…a waffle iron. Now, I can make a bowl of batter and it lasts all week. Breakfast takes me just a few minutes and the kids never seem to tire of them. Here is a recipe that I created for some of the yummiest waffles on the planet.
2 c whole wheat pastry flour
2 c all purpose unbleached flour (can use 4 c of any flour, or combo of flours)
2 TBSP brown sugar
2 TBSP baking powder
½ tsp salt
¾ c hot cocoa mix OR 3 hot cocoa mix packets OR ¼ c chocolate syrup
4 eggs
3 ½ c milk
¾ c vegetable oil
Chocolate chips or chunks
1. In a small bowl whisk eggs until they are light and fluffy.
2. In a large mixing bowl ( I use the large glass one with the spout & cover from Pampered Chef) mix all dry ingredients.
3. Add wet ingredients. Stir until mixed.
4. Heat waffle iron. Pour enough batter in each well just until the well is filled, but not overflowing. Sprinkle in chocolate chips.
5. Close iron and cook until desired doneness is achieved.
My kids even like these as a snack in the cold weather. Since they are easier to make than cookies, I may make these twice throughout the day, once for breakfast and once for a snack. Some days I make a few extra at breakfast and the kids just grab the leftovers when it is snack time. These are also so quick and easy that they are perfect for breakfast on the go!
