I have never been big on making fried chicken. Not specifically because I can’t, but because any meal that requires a lot of work just doesn’t make it on our menu very often. In addition, fried chicken, really tasty fried chicken, has to have the skin and needs a deep fryer. Since I rarely purchase chicken with the skin on and I don’t own a deep fryer, you can take a really safe guess that it doesn’t get made around here. I do have two recipes that my family likes which are baked. Again, the breading of the chicken takes time, so they aren’t made often either. However, I have developed a sure fire delicious and succulent recipe that offers the crunch of fried chicken and a taste that is out of this world! Since it requires no pre-breading or coating it offers the utmost in simplicity. Need another reason to add this to your regular menu planning list? This can be made in a short period of time with chicken straight from the freezer; perfect for those extra crazy days when you need a last minute meal, but forgot to take something form the freezer.

Lazy Fried Chicken Recipe –Stove Top Style

·         boneless, skinless chicken breasts (enough to feed your family)

·         vegetable oil (about 1 TBSP is what I use to cook six servings)

·         All purpose unbleached flour or extra fine flour (extra fine flour makes this even lighter)

·         Salt & Pepper to taste

Optional: Additional seasonings.

1.      In a large skillet, heat oil. Place chicken in pan. Let chicken sit until oil starts to sizzle. If the chicken is frozen, there will likely be a bit of water that ends up in the pan as the chicken begins to cook. Let the water cook out until it is almost evaporated. Sprinkle the chicken with flour, just enough to cover pieces. Add salt, pepper, & seasonings to taste.

2.      Check the bottom of chicken, when the pieces just begin to brown flip the chicken. Sprinkle with flour again, and then add a bit more of your salt, pepper, & seasonings.

3.      When bottom of chicken is brown and crispy, flip one more time. Continue to cook until bottom is crispy.

4.      Serve.

It really is that easy. Although, this is not the ultimate in low-fat cooking, it offers you an option that is much lower in fat than traditional cooking methods. There is no skin, which reduces the amount of fat dramatically. Using a minimal amount of oil and flour also offers reduced calories. This is great served with any vegetable side dish and a grain. It also can be great paired with just a salad! Have children that prefer finger food? Simply slice your chicken into “tenders” before cooking. Dress it up or play it down, this recipe is one of the best in versatility and simplicity.
